Slope Farms sells grass-fed beef only in bulk—as whole, half, or occasionally quarter animals. Buying beef in bulk is different from buying individual cuts. It’s more of a collaborative process that involves planning, lead time, and decisions about processing and packaging.

Wholesale Buyers
For wholesale customers, purchasing means aligning your needs for cuts, scale, and flow with our schedule for cattle finishing, processing, and delivery.
We process cattle weekly, and deliver weekly to the NYC metro area, the Catskills, and the Hudson Valley. The beef is shipped fresh or frozen. We work with a very experienced, small, USDA processor located close to the pastures.
Our beef is custom processed. This includes supplying butcher shops that receive the beef uncut, as well as retail stores that receive case-ready individual butcher cuts wrapped in Cryovac, cut to buyer specifications, with seasonal variation.
We strive to supply grass-fed beef of consistent finish and quality, and to meet your rhythm and scale. We value working with wholesale buyers who have a regular purchasing rhythm, while recognizing the need for flexibility around seasonal flow and business variability.

Private Individuals and groups
For individuals or small groups, purchasing in bulk often requires getting up to speed on cut yields from a half or whole steer, and the processing decisions you’ll be making. And for us it means understanding your cooking and eating preferences, storage setup, and delivery options.

Scheduling requires some advanced planning, and depends on the season, timing of cattle finishing, and processor schedule.
